Easy holiday entertaining

Holiday entertaining is stressful …but it doesn’t have to be.

Here are some planning tips to help.

  • Invite smaller groups with things in common
  • Make sure to have enough ice & glassware
  • On the invitation, set a start and end time, about 2-3 hours

This will keep you on  budget and help plan on the amount of what you are serving.

Then fill the sink with ice to keep beer and sodas cool.  I have a couple of bottles of wine, red & white, and find that guests quite often bring what they like as a hostess gift.  That way people can help themselves and all is easy!

Since many people are trying to keep their calories down, I have a Weight Watcranberry-mojito-punch-recipe-5-of-8chers recipe that I use for Cranberry Mojitos.

  •  12 oz limeade concentrate, thawed
  • 1 cup fresh mint leaves chopped (save some for garnish)
  • 3 medium limes   Squeeze 2 Tble juice and cut wedges with rest
  • 4 cups crushed ice
  • 8 oz white rum
  • 16 oz seltzer
  • fresh cranberries

Combine limeade, mint leaves,lime juice and cranberries.

After sitting for 2 hours, strain out solids, add rum and seltzer and pour into pitcher.  To serve, pour into glasses with a mint leaf and lime wedge.  Voila, making memories!

Limit your menu to a cheese platter with fruit, crackers & breads.  Cookies (Aldis always has a wonderful selection of holiday cookies at a good price)  Meatballs, and a veggie platter with  dips served in red and green peppers for a festive look.

Remember, this is not a meal but appetizers!
